That reminds me of how my Grandma Bloyd used to cook with lard, when I was
growing up in Victoria. F'rinstance, she would take a tennis-ball size lump of
lard and mix it in with the dough for breakfast biscuits. You can't get
biscuits that taste that good at either Hardee's, McD's., or KFC. She bought live
chickens from an old black man that came through town on a horse-drawn wagon once
a week selling chickens, eggs, vegetables, fruit, and live turkeys (during
the holidays). I tell ya, there ain't nothing like a fresh-killed chicken that's
been fried up crispy with lard in an iron skillet! I also remember that when
she cooked cornbread, she would take whatever grease was left over from
breakfast ham, sausage, or bacon and stir it in the cornbread batter. Grandma B.
lived to be 90, God bless her, and I still miss her "country" cookin'!
