To my ears the intro to "Have You Ever Loved a Woman" at the Belfast
Odyssey (2004) was EC without a pick. Of course I could be wrong because
I never had an opportunity to actually see any of the recent tour's
shows.

I agree with your assessment, especially the last sentence.  I think too
that there may have even been some experimenting, to a certain extent,
onstage with EC in Japan with so many solos being finger played.
