Clive:

If you are carving a log with the back sawed flat to hang on a wall, you can
simply screw a 2 x 4 of the correct length into the back of the log and
mount the 2 x 4 into a standard vice.  If you don't have a vice make the 2 x
4 wide enough to extend out either side of your carving and use C clamp's to
hold it down to you work table.
