Hi Joe,
Welcome to the List.
There are two reasons for the knife not cutting smooth, dull knife and wrong
direction. If your knife is razor sharp, so sharp that you can shave with
it, than try reversing the direction of cut to see if that helps to approach
the grain from the other direction.
