Vic's advice is probably the best you will get. When trying to carve
(chip especially) any hard wood like cherry which grain seems to have a
mind of its own, consider if the end result will be worth the effort.
It generally is not.
If the cherry box is large enough you may wish to consider a basswood
insert. Or you may be surprised with the results of using butternut and
staining cherry. Try staining on scrap pieces first of course and see
how close you can come.
