Raised lettering is my favorite, and second is "incised" lettering -
what you labeled "sunken" lettering. Incised lettering is quite
unforgiving. A mistake is very hard to correct. Raised letters can be
cut away if a mistake is made, and new wood glued into place and
re-carved.
Quilted letters work well on ribbon surfaces. Burnishing the letters
adds an extra level of elegance to their shape and sheen.
