[Woodcarver] Olive Oil Finish

I know you pros have addressed the issue of nut/veg
oils as finishes before, but I need a reminder. I just
bought two beautiful large unlacquered wood salad
bowls with 8 matching small bowls at a local rummage
sale. I've cleaned them in a solution of Murphy Oil
Soap and warm water. I'm going to carve some shallow
palm trees or banana leaves around the edges, then
treat with an oil finish.
In Robin Trufel's recent article in Carving magazine,
wherein he carved a rooster spoon, he finished it with
olive oil, and mentioned that walnut oil was good,
too. If I recall, List members who carve spoons and
other vessels for food once wrote that nut oil
finishes can turn rancid and advised against using
them.
I'd love to hear spoon carvers' comment on the use of
"pantry shelf" oil finishes (such as olive oil) versus
purchased salad bowl finishes such as Woodcraft sells.
