Strange, I never had that problem with my holly. Here's a link to one

Carved (1996-1997) while wet, finished with wax, no change in color
since.
The remaining piece of holly waits for my lathe. Might turn a perfume
atomizer with part of it. Turned three recently (zebra wood, hoduran
rosewood and hoduran mahogany (salvaged from a pole of a broken deck
umbrella)) no pictures yet.
