[Woodcarver] Gray Holly?

I have one pice of the original log remaining, stored in the  basement.  It 
has not turned color.
It is an American Holly cut near here in Prince William County VA.
 
Now, the inner bark will gray, but not due to bacteria, it's the water in  
that part of the wood.  Once that is carved away, no graying has  occured.
