[Woodcarver] Gray Holly?

I AM CONFUSED BUT WHAT IS BRINE WATER?

Hmmm. You said you carved it while wet. Have you looked at any that you have had stored? I turned a few things from just cut wet holly that were very white, but did find holly that I had stored was gray.
    A member of my woodturning club recommended that I soak it in brine water for about 6 months to kill the bacteria in most holly that turns it gray. 
    Suppose there is a difference in different species of holly?
    Bacteria not always present?
    Not present in all parts of the country?
    Would appreciate anyone's experience per the above.
