For the cedar, no finish or you'll loose the aroma.
 
For the butternut, just about any clear finish is fine.  Polyurathane,  
varnish, shellac, waterlux, etc. Also depending on whether you want a gloss  coat, 
a satin sheen, or a matte finish.
