[Woodcarver] Chops??

Hi Steve,

Okay...I'll bite what is/are English "CHOPS"??

I feel that I have been around awhile and have heard and been asked
about all manner of things woodcarving/woodworking over the years...but
I am quite stumped by this 'English "CHOPS"' thing! 

Pork chops, Mutton chops, Lamb chops, 'smacked-in-the-chops'...but
'English "CHOPS"'...that one builds...never ever heard this one!
Curious, are there also French, German or American versions/varieties of
these "CHOPS"?

Please explain or describe 'English "CHOPS"'...a picture would be
outstanding!
