Steve:  You want to look for northern-grown butternut.  It's a little harder but holds detail much better and doesn't get the fuzzies.

    Hi Steve and John,

    I chip carve on HORIZONTAL Butternut all the time..... ...I have no problem at all.

    Maybe it all stems to how sharp your knife is, and how strong your hands are.

      STEVE....LIKE I TOLD CYNDA....ONLY CHIP CARVE ON VERTICAL GRAIN BUTTERNUT...OTHERWISE YOU WILL FIND IT VERY DIFFICULT TO ACCOMPLISH....IVE DONE SEVERAL DESK PIECES WITH INSERT CLOCKS THAT LOOK GOOD......I HAVE TRIED CHIP CARVING ON HORIZONTAL GRAIN AND IT DOES NOT TAKE....HOPE THIS HELPS
