Actually, the grain is quite manageable, as long as you remember that 
is it awful to work with <grin>
The soft porous layer sandwiched between two dense hard layers is a 
challenge to carve. Sharp tools and a mallet, with CLOSE attention to 
the direction of the grain, make it easier to carve. I've carved so 
much red Oak that it is second nature to me.
