[Woodcarver] Carving basswood egg question

Hi,
I have a few basswood goose eggs to carve Santa heads. I laid out my first one
and it came out well. I started a second one tonight and realised that I didn't
know if you should center the face on the edge of the grain, or with the flat of
the grain, or doesn't it matter? (I started this one on the flat of the grain)
So, for all you basswood egg carvers, what is your preference for laying out
faces on eggs with regard the to grain?
