I would agree with sir Alex.  I follow this same method for carving anything in the round if possible.  I did deviate on a 19" full figure Native American and the grain pattern allowed me to highlight the different parts of the anatomies.

It is best to put the front of the face on the edge of the grain. That 
makes the nose stronger and less likely for the tip to flake off and also 
avoid target-like grain effects on the cheeks, etc.
