Hi  If you go around the 1st week in October the colors should be 
spectacular.  I lived in NH for
24 years, and have seen a lot of beautiful fall colors over these years.  
Try to avoid the coastal
areas of Maine, Massachusetts, and Conn, as there will be a lot of car and 
bus traffic, due to
leaf peepers.  You say you are traveling in an RV? It will be harder to get 
around in some places
unless you are towing a smaller car with you.
     The Maine lobster is the best in the US.  I recommend any place along 
the RTE 1 corridor
through Wells, Ogunquit, and York, Maine.  Bill Foster's is a great place 
and the price is better
because it isn't a fancy restaurant, all on paper plates and plastic forks 
and such, and nice place
to sit and eat lobster. Back to the colors, some of the best places is in 
the Franconia Notch,
Pinkham Notch areas in the White Mountains of New Hampshire.  Maine has just 
as many nice
areas but you really have to drive a lot more to get to them.
     Haven't been involved in carving activities in NH, as I'm just getting 
started, and I have now
moved to SD, this past year, to be closer to my family.  I did go to a 
couple of woodcarving shows, and one was in August in Wells, Maine, a lot of 
bird carvers, and some large scale chainsaw carving
exihibits.  Sorry, not too much help in the woodcarving areas.  Any other
