Dave I think you should treat your carving as an exercise rather than a 
finished work of art.
At your level you should be looking at practice, practice and more practice.
The priece of wood you are using didn't cost much so just try 
different  cuts etc.
Do it a couple of times and then do another to keep.
Put the first two aside as reference for the next one.
You will be supprised how much easier and quicker they get.
