[Woodcarver] bench idea

Hey All.................     If anyone has seen the veritas carving bench at Lee Valley Tools..........I asked a question about it earlier...............I was wondering if you could use a large hardwood "cutting board" such as you would find in a kitchen store such as williams senoma and build your own version..........think it might work?
