Hi Harry, cyprees knees are basically the roots of a cypress tree. The best ones to carve I have found are from Louisiana and with Katrina I'm sure they will be more difficult to find. Florida area also has them available. Cypress knees have no grain pattern. It runs wherever it feels like. This makes hand tools difficulut so many folks use power or a combo of hand tools and power. Carole Lee Boyd has a book due out ANY DAY so check with Big Dog. Carloe Lee is a great teacher and she shared with me what the book will cover so it would be a great investment.
