I have Stubai tools and have never had any problem with them. They are excellent quality and while there might be some possibility of getting a bad one the problem might be from getting the edge steel too hot during sharpening. There could be a tendency to do this if a lot of steel must be removed as in the case you described where the cutting edge had to be taken back 1/8". I have accidentally "burned" the end on some smaller tools and although they polished up and sharpened nicely, getting the steel too hot caused the cutting edge to be brittle and easily chipped. I suspect that yours might be a similar problem and if if the edge were redress and sharpened without getting the metal too hot and cooling it frequently in water you might find that the steel in the tool is good.
