I think you will find that most(which means not all) carvers make up their 
own.(G)
You might want to take a look at "The Wizz"  Richard Rombold's Picturetrail 
gallery site he has numerous types of carving holding devices some which 
incorporate a seat.

Also the Mar/April issue of Chip Chats each year usually includes 
woodcarving equipment/books/tools etc. suppliers and I recall seeing some 
ads for sit down carving bench/holders there.
BTW when you say "carving  horse" most people will think of a shaving horse 
which you will see adaptations of in Richard's picturetrail gallery.
