Hi Bob,
The steps in sharpening those blades are the same for any other knife, just
the angles are a little different. Lay the blade against you honing stone,
buffer or grinder first to determine the angle before you begin. Watch that
you get the entire edge without changing the curve.
The concave blades are more difficult because the curve goes to the inside.
Using a round stone will keep the corners from nicking the blade. Bend the
leather strop, with buffing compound to fit the inside curve of the blade,
for buffing.
It might be difficult to find a round stone. I have a round ceramic rod I
use for heaver stock removal of those inside curved blades. You can also
wrap sandpaper or emery paper around a round dowel to do the same thing.
Bending the strop works well for the final buffing.
