OK, a Mac. Good for you.

After you take a digital picture you can upload the images into iPhoto.
iPhoto senses when a camera is attached and starts loading the images
into its directories.

In iPhoto, you process the images - crop, rotate, straighten, exposure,
sharpen, etc.
Then EXPORT the image in whatever format you want, and export it (in
the file size of your choice) to the desktop where you can find it.
Then go to your emailer and "attach" the image to a message. Simple.

Keep in mind that you can also attach the image to an email message
from within Apple's Mail program. And you can set the file size, and
access the email addresses in your address book, all from within Mail.
Slick!

Scanners do what camera do... they digitize an image. Except for the
most part, cameras do it better - higher resolution, allowing for
editing/cropping, etc.
The .jpg file format is the one you should always use for email. Avoid
the .tiff format - the file sizes are enormous.
