  I've had a look at your work and its really beautiful.
  It seems to me that you're dealing with an honest person regarding the use of your design. They did after all approach you and ask for permission to use your design. In doing this they have acknowledged that the copyright is yours. They could easily have had a copy made and you would probably have never known.
  I would suggest you should write them a letter telling them your charge for using your design, and specifying that it is for 2 stain glass windows only. Presumably this might involve you supplying drawings or working in some way with the stained glass artist which will be fun.
  As others have already advised you, it is very expensive and unpleasant to get involved in litigation.
