In addition to Maura's suggestions, may I add:
1. Wood has a tendency to cup towards the sapwood.
2. It also cups into the carving.
Thus, if you are not laminating the wood to control the cupping, try carving with the sapwood down. Then the tendency of the wood to cup towards the sapwood will be countered by the opposite force--the tendency of the wood to cup towards the carving.

Do not carve more than halfway into the wood. you can also remove some of the thickness from the backside. Together this should help minimize any cupping.
