One trick I use is to hot glue a small block onto the back of the
side I'm working on. It can be six or eight sided so the piece can
be rotated in a flat workbench vise or it can clamped in a rotating
carving vise. Use high quality woodworkers hot glue, not the kind
you find in craft stores. If possible, leave the area that the block
is glued to a little thick so that it's easy to cut the block off.
If the area is already carved close to the finished surface, you can
use a stripping gun and scraper to remove the glue.
