Hi Maura,
It has been my experience that a class takes 3 times longer to carve something than if you were doing it by yourself - sometimes longer.
Perhaps if your design had a repeating factor - that is, one section that you could help to completion and the other section they could attempt on their own. That would give them immediate practice if they had time in class but gives them a finished section to look at if they don't have time for the whole thing.
Having them put the design on is great but again you have to judge the time. You will have to do a dry run of putting the design on and carving it - giving yourself lots of breaks. Then triple the time to see how long it might take the class. And if you have a large class sign up - it will take even longer to get them through it.
