[Woodcarver] Business Plans?

Hello all,
I've had other chip carvers ask me, "How do you price your carvings?"
For commissioned work I price each piece by the square inch. I have a square inch sliding scale depending on the complexity of the carving. I add this price to the cost of the object being carved and bingo...well, maybe not bingo...but it works for me.
I know my prices are on target when customers say, "That's about what I would have guessed."
 
Do you have a formal business plan?
     It's formal

If you respond, please tell us if you are:
A). A professional carver (earn all or most income from carving)
B). A semi-pro (earn less than 50% from carving)
C) A serious hobby carver who sells the occasional piece.

If you teach in addition to carving, please include that info as well.

I would be interested in the answer to this also.  I had a few pieces in a wine and art show and (had no plans in trying to sell anything then but now...) and a few people came up and wanted to buy my carvings and woodburnings.  I have no idea on where to start to try and price and sell my pieces.
