Dave,
Micro-Mesh makes sandpaper up to 12,000 grit. Mighty fine. Most times I think 600 may be fine enough for touching up gouges, and that is available in wet/dry most places.
As for your group project- how about a zoo? That would give you all an opportunity to carve lot of different kinds of animals- but not necessarily in pairs. Maybe some buildings to go with it.
Or a farm scene with people, animals, buildings, and vehicles- that should keep you all busy for a long time.
