There are dozens of different types of cedar and within the the
different types, there is heart wood and sap wood. There is also the
number of growth rings. There is no specific answer to your question.
I have carved several different types with these different
characteristics. All I can say for sure is stay away from Western Red
Cedar. What I have found that works well for me is close growth rings
in the heart wood of western incense cedar, Port Orford cedar and
Alaskan yellow cedar. There are surely others that I am not familiar
with. Try doing some research into what type of cedar the carvings you
have seen are carved from.
