[StBernard] Spinach & Artichoke Pasta Dish

Got this from ex-daughter-in-law, Angie. Here is a YUMMY Spinach and
Artichoke pasta (low -fat) from Weight Watchers (only 3 points)


- One 9 oz package of Birds Eye creamed spinach (box)
- One 9 oz package of Birds Eye artichoke hearts (box)
- Half of a medium onion, chopped
- 3 Tbsp minced garlic
- 1 1/2 cups of fat-free half-and-half
- 1 Tbsp lemon juice
- 1 Tbsp parsley
- 1 Tbsp cornstarch (mixed with cold water)
- Salt and pepper to taste


Defrost creamed spinach and artichoke hearts in advance.

In a medium saucepan over medium heat, add the defrosted creamed spinach and
artichoke hearts. Then add fat-free half-and-half, onions, garlic, and lemon
juice. Mix together and simmer for 5 minutes.

Add salt, pepper and parsley. Simmer for 5 more minutes.

In a separate bowl, add 1 tbsp cornstarch and 3 tbsp of cold water. Mix
well. Add mixture to saucepan to thicken sauce.

Simmer for 5 more minutes.

Serve over whole wheat Rotini (spring-looking pasta). For an even tastier
meal...you could add some grilled chicken or shrimp...or CRAWFISH!!!!
YUMMMM ... lip smacking goooood!!!
