Clive.....go to any antique store, or even a pawn shop and look for an "Oldtimer".....they  usually have 3 blades but many have two.....reshape them to your own usage......the "older" the knife the better steel.....I have several/reshaped/sharpened/de rusted if necessary.....they really hold their edge too.....they feel good cause they are shaped to fit hands....they have bone or bone like on the sides ....they come in varied lengths.....i have a little larger hand than most....but they do come smaller.....buym' to fit
