The 1"-#3 is sufficient for removing the wood on the large text area of
the carving.
May I suggest, to make it easier, plough several V-grooves cross-grain
(from left to right/right to left) on the text area. This creates empty
spaces which aid in the removal of wood with the larger gouge.
