Ian Norbury has a really good video on carving a horse head.  I've been
using it to help me learn to carve a carousel horse, and it's been very
useful.  His web site is http://www.iannorbury.com/ ...I believe it's
downloadable.  Hope this helps....I've been having fun teaching myself.
