Mary Duke Guldan has a couple of books of carving projects that include
excellent patterns for horses in a variety of poses.

Also look for Ken Hultgren, "The Art of Animal Drawing."  It has the kinds
of proportions you're looking for.

Big Dog probably has the books in stock.
