Hi Solly,
Welcome to the Woodcarvers List.
Sharpening angles and shapes are different depending on the carver's
personal preference, what material they are carving and the style they
carve.
I carve mostly hardwood like blackwalnut, oak, cherry, ash, maple and
mahogany so I perfer my angle at the cutting edge to be about 28 degrees. I
also prefer my bevel to be rounded instead of flat. Many who carve the
softer woods want less drag and a lower angle to plane the wood better, so
they like a 19 to 23 degree angle. Knives are typically about 10 degrees for
less drag so they can be hand pushed through the wood.
