[Woodcarver] White and gray holly

I  stored 3 or 4 pieces of holly without doing  anything. When I took it out 
and started to turn it, all the pieces were a  dirty looking gray. That is 
what prompted me to start inquiring about how to  avoid this and was advised to 
soak it in very salty water for about 6  months.
    I have no clue as to why some would turn gray  and others not. My pieces 
were about 1 year old when I took them out to  turn.
