The simplest way to hold a large piece and probably the cheapest as well 
is... Take a piece of timber between 3 and 4 inches square and 18 inches 
long.  Drill a hole in one end to put a  coach bolt ( I think you people 
call the lag bolts)  This is screwed into your carving in a place it dosn't 
show. The other end is clamped to your bench.  If you also take the corners 
of your length of timber so you have a long octagon shape you can, by 
reclamping, tip it to lie flat or at an angle. to rotate just loosen the 
bolt and twist.
I hope I have explained it so you can understand, if not just ask.
