[Woodcarver] one eye carving (clay)

Hi Maricha,
I like this idea.  Having never worked with clay, I have some questions:
What kind of clay do you use for this type of creating?
How long can you work with it before it dries or "does" it dry?
Can you use the same clay over and over?
How long before the clay is no longer useable?  (Does clay have a shelf 
like?)

I followed the thread to Chris' question about clay.  My questions 
might be similar but not sure.
