Hi Doug,
When chip carving in a hard wood like cherry, or when removing chips too big to remove in a single pass in any wood, my suggestion would be to remove your chips in multiple passes, starting well inside your pattern lines.
The chips will be quite small to start with and then work your way out to your pattern lines.
On the very final pass, carve on your line to full depth to get a smooth sidewall and crisp and clean chip.
You should use proper technique when carving so the same angle is maintained for all chips.
I plan to produce a video demonstrating this technique in the near future. Much easier to understand when you can see it done rather than just a written explanation.

I want to carve a monogram into a cherry wood box I am building. I have chip carved in bass wood, butternut and pine but never in harder woods. Any hints on what I should do? I have carved maple, cherry and birch and found them to be difficult but carveable as long as I took small chips and used all my patience.
