When carving with Cub Scouts I've used sweet Potatoes. We use those cheap paring knives that you get 6 for $1 at the Dollar Store. It is not as messy as soap and they can eat the chips. When they are waiting for me to give them some help I have them peel the skin off. You have to make the features large because when they dry it becomes about 1/4 the size. Use a piece of board for a base with a nail to stick the potato on. Years later they tell me that they still have their potato carvings.

I have been told to begin carving on sweet potatoes. The people who have said this tell me the sweet potato is a pretty good imitation of wood, if you make an unfixable mistake, you can eat it and nobody knows, they are inexpensive and you can let them dry and the will last for years. You can also paint them after they have dried completely. I have no personal knowledge yet, just bought the sweet potatoes! :)
