Get your pine from as far north as you can, New England or from Canada.

Subject: [Woodcarver] Pine for carving
The folks in Europe use pine for various carving. I'm into acanthus style
carving, and would like to check out pine for a project, rather than the
normal basswood. Does anyone have experience with this, and also a
recommendation for a source, hopefully in a price range I'd be willing to
pay. The size would be 6/4 (rough cut) 24 inch long, and 4 or more inch
wide.
Thanks
Alex in Minnesota
