I do this all the time.
If you take a wide gouge say a No5 or 7 and scoop out the damaged piece
with a single smooth cut, then go to a scrap of the same wood and repeat
the process. Take the new piece and glue it in.
If you can get the replacment slightly larger it is better .
If the rplacement piece flkes a little just make sure that there is glue in
the cracks.
Apply a little presure and it will make a good tight fit.
