Hi, Randy,
You are not alone in having problems carving eyes.  I think most of 
us did at once time.
I have a short (2-page) tutorial on carving faces on my web 
page.  You...and anyone else who may be interested...are welcome to 
download it, use it, share it, dump it....whatever.  There is a 
section on carving eyes.
